Happy Sunday Friends!
How's your weather? Winter is here in the Laurentians. It's very pretty but dang is it cold! The huskies love it, but Jack will soon be giving me those bedroom eyes in hopes I won't make him pee outside. I don't blame him!!
It's clean out the pantry, fridge and freezer week! I had some leftover blueberries that I froze last summer so I made some really delicious Blueberry Muffins. I LOVE muffins! I don't think I have a favourite though, do you?
I had bags of frozen tortillas so the other night I made a Meatless Mexican Lasagna. This lasagna is a mish-mash of ingredients that I needed to use up. One layer of roasted potato slices, lots of fried onions and tomatoes, salsa, scrambled eggs and of course, Cheddar cheese. I wasn't sure it would work but it was very good!
I gleefully discovered that I had a frozen pie crust in the deep freezer; and I had leftover Thanksgiving pumpkin pie filling, so I made another Creamy Pumpkin Pie.
I had a Butternut squash sitting in the bottom of the fridge (that I'd forgotten about!), so I made my Apple and Butternut Squash Bisque. I tried a new recipe for Dinner Rolls and they went very well with the soup!
I'm planning on using up a lot of veggies this week for some lovely soups: French Onion Soup, Carrot Soup with Orange and Ginger, Roasted Tomato Soup and Leek and Potato Soup. Alex and I are "clean-eating" for the next few weeks. Our Thanksgiving and Halloween feasts were a lot of fun but we both need a break from the sugary fatty foods for a while! What's for dinner tonight chez vous?
The heat is on now in every room. It's very cold for November, I hope that's not an omen for the next six months!! The cats all hang out together on the couch right in front of the heater. They love being toasty warm!
Marlene and Jack love being warm under their little blankets too!
Charlie though...she is a pure husky and she would live in an igloo if we let her!

ReplyDeleteIf you want to send some of your cold weather my way I would be so happy. We are still at 85F! Pretty hard to wear sweaters and sweatshirts in that kind of heat. I do have a favorite muffins. Apple cinnamon is my favorite with blueberry my second. You did a grand job cleaning out your freezer and fridge. Lots of yummy looking soups there and that Mexican lasagna sounds pretty darn good too. Your critters have such personalities. But those eyes on Jack get me everytime. Also, I do not think I have even seen a husky under a blanket before! Too cute.

I need to do a 'frig clean out soon - vegs. to use such as mushrooms, spinach, avocados, carrots etc. I think a deep dish spinach/mushroom quiche in the making soon, and perhaps more soups for the freezer!

Hi Rain, your pets really have a great life! Lovely to see them all comfortable and snuggling up with one another. It looks VERY cold indeed. Here it is cold and frosty, but NOTHING in comparison! ReplyDeletei love all the pet pics but the gif of jack is too sweet! your food....YUM!!! it looks soooo good, especially all of the soup. i've been staring at 3 butternut squashes for a week so maybe i'll turn them into soup too. we have super cold weather on the way. i heard that novemeber is suposed to be cold and december much milder. we shall see!
ReplyDeleteYou have snow! We've been flirting with cold weather too, but so far no snow. Still, it's great to stay indoors and enjoy muffins and soup!
ReplyDeleteIt's cold at night but warming up during the day and definitely no snow. Today will be 70 F so I may get out there and paint some more.
ReplyDeleteYour foods looked so good and what a great clean out of your freezer! I made my 6 week Raisin Bran muffins which I love. I can make as m any or as few as I want and the batter is good in the frig for 6 weeks! Check my blog as I posted the recipe or just Google Raisin Bran 6 week muffins.
Jack just cracks me up...Annie had eyes like that...."poor pitiful me" and she would shiver for added effect! LOL! What's not to love? Have a great week!
Everything looks so delicious. So much snow, my goodness. Yes, huskies love the snow and the cold. Poor little puppies under their blankets on their pillows. My goodness, you are just like me. I have pillows and blankets for both of my Bostons. And the gif is so much like Lucy. She has taken up with chattering. I need to find a way to record her. She shys away from the camera or recorder.

Oh my goodness, look at all those furbabies cuddled up in blankets. And the GIF of Jack is so fun! Rain, you inspire me even with your cleaning out the pantry food ideas. I need to have a few weeks of doing that. Hey! It hadn't occurred to me that maybe I could use that for my 30-Day Minimalism Game, too!

ReplyDeleteWe're set to get some nasty winter weather starting later tonight and into Tuesday. You are way ahead of us in terms of snow and cold, Rain. And what great meals you made with that fridge and freezer clean out. I really like making soups and did a carrot-ginger this weekend with homemade bread and a tossed salad for our greens. This week, it will be butternut squash or bean soup and I may give biscuit making another try. The cats look so comfy on a chilly day and Jack could melt anyone with those eyes, very soulful and sleepy too.

ReplyDeleteOur animals all moved inside as well. We hardly see the cats in the summer, but now they are all cozying around the house. The dogs are big babies when they are beibg send out for a pee...lol
All the farm critters are in the barn at night and noone is complaining ;)

I need some clean eating as well. We've had so many "special occasions " lately and another one coming Saturday, lil's birthday. No more birthday cake or pie after that ;)

I keep saying every year "it's too early!" but it's the same weather pattern lol...I haven't accepted it yet that's all! :) I'd like to try making biscuits too, and dumplings in soup!
ReplyDeleteHi Sis :) -34 is NOT ACCEPTABLE. I really am happy to hear you have better insulation this year, my gosh it is TOO early for that kind of deep freeze. We are still dealing with crappy insulation and a landlord who doesn't especially care to do much about it. Boo. Can't wait to be the boss of my own home! I have to check out your post. Clean eating for a few weeks to prepare for the Yuletide holiday onslaught lol! :)
ReplyDeleteHi Baili :) I'll be honest, the snow this time of year is very pretty and very magical...but it gets very tiresome come January and doesn't all melt until May. I could be very happy in a milder climate. The pets LOVE to be all cozy and it makes me want to cuddle up right next to them! The soups are great for this month, they really are comforting to have for dinners!

ReplyDeleteI can't help love Jack the most; it's his soulful eyes. Love seeing the Huskies in the snow; man, you got it full force there. I also admire how you waste not, want not. Do your cats sniff each other's butts? My kittens are starting to do that.
