Tomato Soup Au Gratin
Tomato Soup Au Gratin
(Makes 3-4 main dish meals)
Ingredients
1 tbsp unsalted butter
1 onion, chopped
1 Garlic clove, minced
3 cans of stewed tomatoes, without the juice (I used 3 pints of my own canned tomatoes)
2 cups chicken stock
1/2 cup white wine
1/4 cup milk
Toasted bread or baguette
Grated Gruyere cheese
Directions:
1. Melt butter in a large pot over medium heat.
2. Add onion and cook until tender, about 10 minutes. Add the garlic and let cook until fragrant, about a minute.
3. Add tomatoes, stock and wine. Bring to a boil, then simmer for 15 minutes.
4. Using a hand blender, purée the soup carefully; then stir in the milk.
5. Place soup in over proof bowls. Add your toasted bread, sprinkle a good portion of Gruyere cheese and broil until bubbly and brown.
