Tiramisu (Eggless)

Ingredients

2 cups cold milk
1 package (96g) vanilla pudding mix
1 cup whipping cream
3 tbsp icing sugar
1/2 cup cold coffee (or espresso)
1 oz rum
40 crunchy-style ladyfingers
Cocoa powder

Directions

1. Cook your pudding according to the directions on the package and let cool; or use instant pudding but make sure it sets.

2. In a small bowl, beat the cream until it starts to thicken then add the icing sugar. Beat until soft peaks form. Add to pudding and whisk until smooth.

3. Mix the coffee and rum together in a flat bowl. Dip the ladyfingers quickly into the coffee mix and place in an 8" by 10" glass dish (or similar size). DON'T soak the cookies! They'll fall apart.

4. Fill the bottom of the glass dish with the dipped cookies. Top with half the pudding mix and repeat.

5. Sift cocoa powder on top of the tiramisu and refrigerate.

Note: Tastes best the next day.

Note: You can omit the rum, or switch it up with brandy, Kahlua or Tia Maria.
