(Yield: just over 2 cups or 500 ml)
Ingredients
450 g strawberries, washed with tops removed
(equivalent to: 1 lb, 16 oz or approximately 3 cups)
2 cups water (500 ml)
2 cups packed brown sugar (390 g)
Directions
1. Add strawberries and water to a pot and bring to a boil. Lower to a simmer for 20 minutes. Skim the top if lots of foam develops.
2. Strain the strawberries with a fine sieve. Don't press down on the strawberries to try to remove any of the juice. This will make your simple syrup cloudy.
3. Return the strawberry water to the pot and add the sugar. Bring to a boil then lower to a simmer for 5 minutes.
Note: This will keep well in the fridge for 3 weeks or more!
Note: Use any berry to substitute for the strawberries. I've made raspberry and blackberry simple syrup with this recipe too!
