Stir Fried Rice
Stir Fried Rice
(Makes 2 servings)

Ingredients
For the rice
1 tbsp olive oil
1 cup cooked rice
3 green onions chopped
Vegetable of your choice
For the sauce
3 tbsp soy sauce
1 tsp Fig vinegar (or any sweet vinegar)
1.5 tsp sesame oil
1 tsp honey
1/2 tsp garlic powder
A few dashes of ground ginger
Pepper to taste
Notes for me March 2020: Pepper isn't needed, rice vinegar works but double the honey, down to 1/4 tsp garlic powder, 2 cups cooked rice so we have leftovers; use 4 spoonfuls of diced pineapple or tidbits with 2 tbsp of the juice.
Directions
1. In a wok, heat your olive oil. Add the rice and cook for about 20-30 minutes, until it releases most of its moisture. You'll see it start to brown a little.
2. Meanwhile, prepare your sauce by mixing all of the sauce ingredients together and set aside.
3. When the rice is ready, add the sauce and mix well. Add the green onions and your veggies. Mix and blend for a few minutes, then serve.
