Steak Tartare
(From Williams Sonoma Hors D'oeuvre)
(makes enough for about 20 hors d'oeuvres)
Ingredients:
1/2 pound good meat (Filet Mignon, Top Sirloin, Top Sirloin Butt)
- we buy the meat the same day directly from the butcher -
1/4 cup finely chopped onion
1/4 cup finely chopped capers
1 tbsp lime juice
1 tsp Worcestershire sauce
1 tsp olive oil
Dash of Tabasco
2 tbsp chopped Italian Parsley
Directions:
1. Chop up the meat into fine cubes or grind.
2. Mix all of the other ingredients except the parsley.
3. Refrigerate about 20 minutes to 30 minutes.
4. Scatter the parsley on top and serve.
