Spinach Ricotta Lasagna Roll-Ups

Ingredients
6 lasagna noodles (boiled in salt water for 10 minutes, drained and laid flat on parchment paper)
1-2 cups Ricotta Cheese
1/2 large egg
1 clove garlic minced
8 ounces frozen spinach thawed, drained, and squeezed to remove water
1/8 cup freshly grated Parmesan cheese
1/8 tsp dried basil
Dash Tabasco Sauce
Pinch of nutmeg
S&P to taste
1 cup shredded Mozzarella cheese
2 cups Marinara Sauce or your favorite pasta sauce
Directions
1. Preheat oven to 350 F.
2. In a medium bowl, combine Ricotta, egg, garlic, spinach, Parm, basil, Tabasco, nutmeg and S&P.
3. Grease a 9x13 pan (I used butter), then add a layer of Marinara Sauce (about a cup).
4. Spread a layer of the Ricotta mixture on each noodle, then a bit of Marinara, then some shredded Mozzarella.
5. Carefully roll up the lasagna noodle and place seam-down in the prepared pan. Do this with the remaining 5 noodles.
6. Spread the remaining Marinara over the noodles and sprinkle with the remaining Mozzarella. Grease a piece of foil and loosely cover your dish.
7. Bake for 35 minutes, remove the foil and broil to brown the cheese. Enjoy!!!
