Spinach and Mushroom Sauce (for pasta)
Spinach and Mushroom Sauce (for pasta)
From "Italian Aromas"
(makes 4 servings)
Ingredients:
1 tbsp olive oil
1 small finely chopped onion
1 small finely chopped garlic clove
28 oz canned tomatoes (I used 2 of my own jars)
1 container mushrooms, washed and sliced
1/2 cup half and half cream (more if needed)
10-14 oz fresh spinach
Directions:
1. In a large pan, heat the oil and sauté the onions. Add the garlic, tomatoes and mushrooms. Let simmer over low heat about 10 minutes.
2. Add the cream (depends how thick you like you sauce for the quantity). Add the spinach and mix well. Bring to a simmer for about a minute and serve on pasta.
