Spicy Tia Maria Kisses

Makes 22-24 cookies

Ingredients
1/2 cup unsalted butter, softened
1 cup brown sugar (divided)
1 egg, room temperature
1.5 tsp Tia Maria (or Kahlua or brewed espresso coffee)
1 tsp vanilla
1-1/4 cups flour
1/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
22-24 Kisses
Directions
1. In a large bowl, beat the butter and 3/4 cups of the sugar together until it's fluffy. Add the egg, Tia Maria and vanilla and beat until smooth. In another bowl whisk together the flour, soda and salt. Gradually beat in the flour mixture until well blended. The dough should be sticky, you need to refrigerate it about an hour to stiffen it up.
2. Preheat the oven to 350F. In a small bowl, mix the remaining 1/4 cup of sugar and the cinnamon. Shape the dough into 22-24 one-inch balls and roll them around in the cinnamon sugar.
3. Place the cookie balls on parchment lined baking sheets and bake until lightly brown, about 10 minutes.
4. While the cookies are baking, unwrap the Kisses and put them in the fridge to cool.
5. As soon as the cookies are done, take them out of the oven and place on Kiss on top of each cookie, pressing down a little. Let them cool on the pan for a few minutes then transfer them to a cooking rack.
