Smoked Cheddar and Apple Fondue
Serves 2

Ingredients

1/2 cup (125 ml) white wine
1/2 cup (125 ml)  apple juice
*For a non-alcoholic version, use 1 cup (250 ml) apple juice and omit the wine
1 tbsp (15 ml) lemon juice
1 pound (450 g) grated smoked Cheddar (grated makes about 5-6 cups)
1 tbsp (10 g) all-purpose flour
3 tbsp (80 g) non-spicy Apple Butter

Directions

1. Heat the apple cider and lemon juice on medium heat in a fondue pot until you reach a low boil or high simmer.

2. Meanwhile, mix the flour and Cheddar together in a large bowl.

3. In small batches, add the cheese to the fondue pot and mix constantly with a wooden spoon until the cheese is melted.

4. Remove the pot from the heat, then add the apple butter and stir until well-combined.
