Slow Cooker Pulled Pork
Slow Cooker Pulled Pork
(makes a good 6-8 servings)

Ingredients
1 tsp olive oil
1 (3-4 pound) pork shoulder, bone-in
1 cup BBQ sauce (I used a Sweet Bourbon BBQ Sauce)
1/2 cup apple cider vinegar
1/2 cup chicken broth
1/4 cup brown sugar
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
1 onion, chopped
2 garlic cloves, minced
1/2 tsp dried thyme
Directions
1. Pour the olive oil into the slow cooker. Place the pork roast in the slow cooker. Pour in the BBQ sauce, apple cider vinegar and broth.
2. In a separate bowl, mix together the sugar, mustard, Worcestershire, onion, garlic and thyme. Pour into the slow cooker. Mix everything a little bit.
3. Slow cook 6 hours on high or 10 hours on low. (I cooked 3 hours on high and 4 hours on low)
4. When done, remove fat and bone, use two forks to shred the pork and serve on buns with your favourite BBQ sauce.
Note: The original recipe said to put the pork back into the cooking sauce...but it was SO fatty, we decided not to. We kept the sauce and put it in the fridge and will remove the layer of cold fat on top for another use.
