Slow Cooker Coq Au Vin
Slow Cooker Coq Au Vin
(serves 2 with a little leftover)
Ingredients:
S&P
2 chicken breasts, chopped
2 tbsp flour
4 slices bacon
2 tbsp butter
1 pack mushrooms, chopped
3 medium carrots, sliced
1 large onion, chopped
2 cloves garlic, chopped
1/2 cup chicken broth
1 1/2 cups red wine
2 sprigs of thyme or 1 tsp dried
Directions:
1. Season the chicken with s&p. Coat with flour and set aside.
2. Cook the bacon until it's slightly done, you don't want it too crispy. Blot excess fat and cut up in pieces, set aside.
3. In the same pan, add the butter and brown the chicken pieces. Set aside.
4. Add more butter if needed, add the mushrooms, carrots, onion and garlic. Cook about 7-10 minutes on medium to medium-low until they start to get a little soft, careful not to burn them.
5. In the slow cooker, add the veggies, chicken broth, chicken, wine, bacon pieces and thyme.
6. Slow cook 6-7 hours.
