Yield: 1-2 dozen cookies (depends on the size of your cookie cutter and the thickness of your dough)
Ingredients
Directions
1/4 cup (70 g) softened butter
1/2 cup (95 g) brown sugar
1/2 large egg (27 ml)
2 tbsp (29 ml) milk
1/4 tsp ( ml) vanilla extract
1 cup + 2 tbsp (155 g) all purpose flour
1 tsp (7 g) baking powder
1/4 tsp (2.5 g) salt
Directions
1. In a large bowl, cream together butter and sugar.
2. Add the egg, milk and vanilla and beat well.
3. In a small bowl, sift together the flour, baking powder and salt. Add to the creamed mixture and blend well.
4. Cover bowl and chill for 1 hour.
5. Preheat oven to 375 F (190 C, gas mark 5) and line baking sheets with parchment paper.
6. On a lightly floured surface, roll out the dough to about 1/8 to 1/4 inch thick (3-6 mm). The thinner your dough, the crispier the cookie. Personally I like 1/4 inch dough, it's easier to work with! Cut into shapes with cookie cutters. Sprinkle with green sugar.
7. Bake 8-14 minutes until golden brown.
Note: These cookies freeze very well.
