Sausage and Tomato Frittata
Sausage and Tomato Frittata
Ingredients:
6 eggs
1 tbsp fresh chopped parsley
3 tbsp butter
1 small onion, chopped
3 large sausages (of your choice), sliced and quartered
3 medium tomatoes, chopped
S&P
1/4 cup fresh Parmesan
Directions:
1. Preheat oven to 425.
2. Lightly beat the eggs and mix in the parsley. Set aside.
3. In an oven-proof pan, on a medium-heat burner, melt the butter. Add the onion and sausage and cook for about 5 minutes, making sure the onion doesn't burn. Add the tomatoes and season with S&P. Cook for a few more minutes.
4. Add the egg mix and cook for 5 minutes. As the sides start to cook, lift gently with a spatula to allow the mixture to seep down below the cooked areas.
5. Sprinkle Parmesan on top.
6. Cook in the oven-proof pan for 20 minutes until the frittata is done.
