Rain's Marinara Sauce

Rain's Marinara
(makes about 5 pints or 2.5 liters)


Ingredients

4 tbsp olive oil (46 ml)
4 medium onions, chopped
Salt
6 garlic cloves, chopped
1/2 cup red wine (125 ml)
4 pints canned tomatoes (2 liters)
2 tsps brown sugar (10 g)
1 tsp dried basil (0.5 g)
1 tsp dried oregano (0.5 g)
1 tsp dried parsley (0.5 g)

Directions

1. In a medium sized pot, heat the olive oil on medium heat. Add the onions and salt well. Cook until soft, about 7-10 minutes. Keep an eye on the heat, you don't want the onions to burn.

2. Add the garlic and cook for about a minute.

3. Add the wine to deglaze the pot.

4. Add the rest of the ingredients and bring to a boil. Lower the heat and simmer, covered, for about 30 minutes.

5. Cool slightly then blend.
