Rain's Macaroni and Cheese


Ingredients:
2 tbsp butter
1 finely chopped onion
2 tbsp flour
1 3/4 cups milk
1 tsp dry mustard
About 300g dry macaroni (works well with any pasta actually!)
2 cups shredded Old Cheddar cheese
10 strips thick Velveeta

Directions:

1. Preheat oven to 350. Boil macaroni for 10-15 minutes depending on how soft you like it.

2. Melt butter in large pan over medium heat. Sauté onion for about 6 minutes. Add the flour and cook for about a minutes stirring constantly to make a roux. Slowly add the milk, whisking constantly to avoid burning. Add mustard (s&p optional) and heat on low.

3. Once the milk is nice and hot, add the cheeses slowly and mix until they are melted.

4. Combine the macaroni with the cheese sauce in a baking dish and mix well.

5. Bake for 30 minutes. Top with a mix of breadcrumbs and a bit of melted butter and broil until brown.
