Oven-Fried Chicken Basil
(for two)
Ingredients:
2 chicken breasts
S&P
Chopped fresh basil
1/3 cup plain yogurt
1 tbsp Dijon
Breadcrumbs
Parmesan cheese
Melted butter
Directions:
1. Preheat oven to 400F.
2. Pound the chicken breasts to a nice thin width. S&P them to your liking. Put a nice amount of chopped basil into the middle and roll them up!
3. In one bowl, mix the yogurt and the Dijon. In another, mix the breadcrumbs and the Parm.
4. Coat the chicken in the yogurt mix, then in the breadcrumb mix.
5. Place on a greased pan and drizzle with melted butter. Cook between 35-40 minutes until the chicken is no longer pink.
