Oatmeal Maple Bread
Oatmeal Maple Bread
Makes 1 loaf
(Adapted from The Enchanted Broccoli Forest)

Ingredients
1.5 cups rolled oats
2 cups flour
1/2 tsp baking soda
1.5 tsp baking powder
3/4 tsp salt
2 eggs
1/2 cup maple syrup (the real stuff!)
1 cup yogurt
1 tsp vanilla
1/2 tsp lemon zest
2 tbsp lemon juice
4 tbsp melted butter
Directions
1. Preheat oven to 350F. Lightly grease a loaf pan.
2. Grind the oats in a blender to a fine powder. Set aside.
3. In a large bowl, sift the flour, soda, powder and salt together. Stir in the oat powder and make a well in the center.
4. In a separate bowl, whisk the eggs, syrup, yogurt, vanilla, lemon zest, lemon juice and butter together.
5. Pour the wet mixture into the well of the dry ingredients and mix until well combined.
6. Pour into the loaf pan and bake for 50-60 minutes.
Note: This is a crumbly type of bread, more like a cake. It goes stale fast so make sure you either eat it quickly or seal it well in the fridge or freezer.
