No Knead Toaster Oven Bread
(Makes 1 small 9" loaf)
Ingredients
3/4 cup + 3 tbsp warm water (105F)
1/4 + 1/16 (pinch) tsp dry active yeast
3/4 tsp salt
2 cups bread flour
1/2 tsp olive oil
Directions
1. Pour warm water into a large bowl. Sprinkle in the yeast and stir. Let sit in a warm spot for 10 minutes to proof.
2. Add salt and flour. Mix well with a spatula to form a sticky ball. Cover and let rise on the counter for 18 hours.
3. Rub the bottom of 9" glass dish with 1/2 tsp olive oil.
4. Turn out dough onto a floured surface. Fold a few times, form a ball and place seam-side down into dish. Cover and let rise 2 hours.
5. Preheat your toaster oven for a good 20-30 minutes at 425F.
6. Make 3 long slits into top of dough, dust very lightly with flour and seal well with foil. If you are using a Dutch oven, cover it with the lid.
7. Bake 30 minutes. Reduce oven to 400F, remove foil and bake 15 more minutes until golden brown.
8. Let cool completely on a rack before removing from dish.
NOTE: I use a KitchenAid KCO255BM Dual Convection Countertop Toaster Oven - it's the biggest one available. The dimensions are 16" x 18" x 12" (length, width, height).

ReplyDeleteThanks, Rain, but I will need to use my regular oven because our toaster oven will not fit my cast irona Dutch oven which is what I usually use to bake my artisan no-knead bread. Yours looks so good!
