Meringue


Meringue

5 egg whites
3/4 cup sugar
1 cup confectioners sugar

Directions:

1. Over a double boiler, in a large metal bowl, whisk the egg whites and sugar together over medium heat constantly until it reaches 115 F.

2. Mix with a hand blender (or stand mixer) until you achieve stiff peaks.

3. Gently fold in your confectioners sugar until just combined.

4. Pipe as desired and bake in a 200F oven until the meringue is crisp. Mine took about 90 minutes.
