Meatless Cheese Enchiladas
Meatless Cheese Enchiladas
(Makes 2 servings)
Ingredients:
6 Tortillas
1 Onion - chopped and cooked
Sliced olives
Chopped tomatoes
Salsa
Shredded Cheddar cheese
Fresh cilantro
Lettuce
Directions:
1. Preheat oven to 350F.
2. In a 9x13 glass pan, spread a little salsa all along the base.
3. Line your tortillas on a clean counter and fill with onions, olives, tomatoes, salsa and Cheddar. Roll each up and place seam-side down in the pan.
4. Top with more Cheddar cheese and bake for 15 minutes. Broil a little to brown the cheese.
5. Top with sour cream and chopped cilantro and serve on a bed of lettuce.
