Mashed Potato Quesadillas
Mashed Potato Quesadillas
(Makes about 3 Quesadillas)

Ingredients
2 cups mashed potatoes
1 large green onion chopped
6 flour tortillas
1-2 cups shredded Cheddar cheese
Salsa
Sour Cream
Directions
1. Heat up a non-stick pan on medium heat.
2. Stir the mashed potatoes with the green onions.
3. Spread the potato mix onto one tortilla, leaving about 1/2 inch around the edges. Sprinkling on some cheese and place in the hot pan.
4. Watch the tortilla, it could brown really fast so turn the heat down if necessary. You want to see the cheese starting to melt before you add the top tortilla.
5. Once you see the cheese melting a bit, put a tortilla over the top and carefully flip. Cook until the now bottom tortilla browns a little.
Serve with salsa and sour cream.
