Linguine Carbonara


Linguine Carbonara (for 2)

Ingredients:

6 slices bacon
Linguine (or pasta of choice)
1 onion, sliced
1 clove garlic, minced
½ cup white wine
½ cup chicken broth
2 egg whites
¾ cup grated Parmesan
Bunch of parsley, chopped
2 tbsp butter

Directions:

1. Prepare ingredients.

2. Start your pasta. Cook bacon in stainless steel pan. Set bacon aside to drain and add onion in bacon grease until well cooked. Add garlic for 1 minute. Remove onion mix, drain bacon fat from pan (save in case needed).

3. Put pan back on burner and add ½ cup wine to deglaze the pan. Add chicken broth and bring to a simmer.

4.Meanwhile, mix egg whites, Parm and parsley (save some for garnish) with a fork.

5.When wine/broth is simmering, add bacon and onion mix and cook until it reduces a little bit.

6.When pasta is done, drain, keeping a little bit of the pasta water in the pot, put pasta back in the pot.

7. A little at a time, add the butter and Parm mixture to the pot of pasta and mix very well. Repeat with onion mix and bacon. Mix very well until the Parm is good and melted. Serve and add parsley as garnish.
