Homemade Maple Fudge
Homemade Maple Fudge

Ingredients
2 cups maple syrup (the real stuff!)
3 tbsp unsalted butter
1 cup heavy cream
Directions
1. Heat maple syrup and butter in a very large heavy bottom pot**. Simmer for about 5 minutes.
2. Add the cream and turn up the heat. Use a candy thermometer to reach 245F.
3. Remove from heat and let sit for 5 minutes.
4. Using a hand mixer, beat the fudge at maximum speed for 3-5 minutes.
5. Press into a buttered mould, refrigerate for at least a few hours before cutting and tasting!
**You need a large pot because in order to get the fudge to 245F, it has to get really hot...and it bubbles up a lot. The first time I made this, I made it in a little saucepan, but that didn't work!
