Herbed Aioli



Herbed Aioli
Yield: About 1.25 cups (300 g)
(Adapted from Williams Sonoma Burger Night)

Ingredients

1 clove garlic
Salt to taste
1 large egg and 1 large egg yolk
1 cup light tasting olive oil
2 tbsp chopped fresh basil (approx 3 g)
2 tbsp chopped fresh parsley (approx 3 g)
3 tsp lemon juice (15 g)

Directions

1. Add garlic and a pinch of salt to a food processor. Pulse to combine.

2. Add the egg and egg yolk, pulse to combine.

3. With the processor running on high speed, VERY slowly drizzle in the olive oil. Continue to process until the aioli is the consistency of a mayonnaise. 

4. Stir in the herbs and lemon juice and store in the fridge until ready to use.

Serve on your favourite burgers!

*NOTE: The aioli will thicken in the fridge.
