Goat Cheese Stuffed Mushrooms
Yield: 24 appetizers
Ingredients
Directions
3 slices day-old bread
1 clove garlic, roughly chopped
1 green onion, roughly chopped
1/2 red pepper, seeded and roughly chopped
5 ounces goat cheese
2 ounces Mozzarella, chopped
2 tbsp finely chopped fresh cilantro
24 large button mushrooms, stems removed and caps well rinsed
1 tbsp grated Parmesan
Directions
1. Preheat oven to 350 F.
2. In a food processor, pulse the bread until it's finely crumbed. Remove about 1/3 cup and set aside.
3. Into the food processor, add the garlic, green onion, red pepper, goat cheese, Mozzarella and cilantro. Process until well-combined.
4. Fill each mushroom cap with filling.
5. In a small bowl combine the reserved bread crumbs and the Parmesan cheese. Dip the top of each mushroom cap into the bread/Parmesan mix and place on a parchment-lined baking sheet, filling side up.
6. Bake for 15-20 minutes until mushrooms are tender and the tops are browned.
Note: You can put them under the broiler on high if you like them more browned on top.
