Gina's Pizza
(Recipe from Buon-A-Petitti)
(Makes 4 pizzas)

Ingredients
Pizza Dough:
2.5 pounds flour
1 & 1/8 tsp yeast
1 tbsp salt
4 cups warm water (105-100 F)
Pizza Sauce:
2 tbsp olive oil
1 clove garlic, minced
Fresh basil
1 liter canned tomatoes
1 tsp oregano
S&P to taste
Note: When using store-bought canned tomatoes, I always add a tsp or two of sugar to help with that tinny taste.
Pizza topping:
Parmesan
Sprinkle of oregano
Drizzle of olive oil
Mozzarella (optional)
Directions
1. In a medium bowl, use about 1 cup of the warm water and add the yeast. Add the salt. Mix a little and let it sit 5-10 minutes until the yeast is bubbly.
2. Pour the yeast mixture into the flour. Add water, one cup at a time and mix the dough gently with a spatula. When it's too hard to use a spatula, use your hands to mix everything together to form a sticky dough.
3. Using a spatula, clean up all of the dough around the bowl. Sprinkle a little bit of flour on top and cover with cling film. Let rise in a warm spot for one hour.
4. In a medium pot, heat the olive oil. Add the garlic and let cook for one minute. Add a handful of chopped basil and stir well.
5. Add the tomatoes and oregano. Crush the tomatoes with a wooden spoon and season with salt and pepper. Simmer for 15 minutes, cover and turn off the heat.
6. After one hour, punch the dough down and turn it over in the bowl. Let rest another 30 minutes.
7. Preheat oven to 400 F. Grease four baking pans with lard or butter. (Don't use oil to grease your pans, the pizza will not stretch well on oil)
8. Cut the dough into four pieces. For each pizza, stretch it out in your hands as you place it on the baking pan. Pull the dough and stretch it out so that it fits in the pan nicely without the edges pulling back. Pat it down.
Tip: Have a small bowl of olive oil handy to dip your fingers. This helps the dough not to stick to your hands.
9. Spread some of the pizza sauce on your dough. Sprinkle with Parmesan. Sprinkle a very little bit of oregano on top. Drizzle generously with olive oil.
10. Clean the edges of the pan to prevent burning. Bake for 20 minutes (if adding Mozzarella); 30 minutes if not.
11. If using Mozzarella, take the pizza out of the oven after 20 minutes. Sprinkle on Mozzarella and bake a further 10 minutes.
