Garlic Noodles
Garlic Noodles

Ingredients
6 oz chow mein noodles (about 180g)
3 tbsp olive oil
4 green onions , chopped, white and green parts separated
2 cloves garlic , minced
For The Sauce
1/4 cup chicken broth
2 tbsp sweet Sherry or white Port
3 tbsp soy sauce
1/2 tsp sesame oil
1 tsp ground ginger
Directions
1. Combine all the sauce ingredients in a small bowl, mix well and set aside.
2. Boil the noodles according to how you like them. We like our noodles very soft, so I boiled them for 10 minutes. Rinse in cold water.
3. Heat 3 tbsp oil in a wok or nonstick skillet over high heat until hot. Swirl to coat the bottom of the pan with oil. Add the noodles. Toss with a pair of tongs until the edges are lightly charred (this took a good 10 minutes).
4. Add the white part of the green onions, along with the garlic. Cook and stir for a few seconds to release the fragrance.
5. Pour in the sauce. Quickly toss the noodles until the sauce is absorbed. Add the green part of the green onions. Transfer the noodles to serving plates.

my mother grew onion in her garden and i could never for get the taste of fresh green onion
