Fricassee Potatoes
Fricassee Potatoes
Serves: 2-3

Ingredients
Butter or olive oil
4 medium potatoes, peeled and cubed
1 onion, chopped
Salt
Directions
1. In a large frying pan, melt the butter and add the potatoes. Cook for 10 minutes, stirring frequently
2. Add the onions, salt well; and cook another 5 minutes, stirring well to make sure the onions don't burn.
3. Cover the pan and cook a further 20 minutes on medium low heat until the potatoes are tender.

ReplyDeleteI've pretty much made this recipe all of my life but called mine fried potatoes with onions. lol
Cathy I call them my Fricassee potatoes because I used to make a chicken fricassee with these as part of the recipe, but we don't eat much meat anymore!! ☺
