French Gruyere and Onion Fondue
From Fondue by Rick Rodgers
(makes 2-3 portions)
Ingredients:
2 tbsp unsalted butter
1 large onion, very finely chopped
1/2 cup white wine
1/2 cup beef stock
1 tbsp white wine vinegar (we used a sweet fig vinegar)
1 pound grated Gruyere cheese
2 tbsp flour
1 tbsp brandy
1/4 tsp dried crushed thyme
Ground pepper to taste
Directions:
1. In a heavy bottomed pot over medium heat, melt butter and add onions. Let onions slowly brown over 10-15 minutes in the butter, stirring often.
2. Add the wine, stock and vinegar and lower heat to medium low.
3. Mix cheese and flour together and gradually add to pot, stirring constantly as it melts.
4. When it's melted, add the brandy, thyme and pepper and mix to blend. Transfer to fondue pot.
Serve with homemade cubed bread! Yum!!
