Fish and Olive Cappellini
Fish and Olive Cappellini
(Serves 2)
Ingredients:
2 fish fillets of your choice
Dab of butter
Splash of white wine
Salt
Cappellini pasta - enough for two
These ingredients are to your taste:
Butter or olive oil
Tomatoes, chopped
Sliced green olives
Grated Mozzarella
Directions:
1. Preheat your oven to 450.
2. Place the fish fillets in foil and salt them. Add a dab of butter and a splash of white wine. Seal up the foil and bake for about 10-15 minutes depending on the size of your fillets.
3. Meanwhile, cook your pasta. I like Cappellini because it's a very thin noodle, almost an angel hair pasta.
4. Drain your pasta and place back into the pot. Add some butter or olive oil, the tomatoes and olives and toss around over medium heat until everything is nice and hot. Remove from heat and plate your pasta.
5. Grate a little Mozzarella over the pasta, then place the fish on top.
Enjoy!
