Egg Bread
(Adapted from The Enchanted Broccoli Forest)
Yield: 1 loaf

Ingredients
1 1/4 cups warm water
1/2 tbsp yeast
1/4 cup honey
2 tbsp melted butter
2 eggs (one for brushing the bread before baking)
1/2 tsp salt
4 1/2 cups flour
Directions
1. Place the water in a large bowl and sprinkle the yeast on top. Beat in the honey, butter, 1 egg and salt with a whisk.
2. Add the flour a little bit at a time, first beating with a whisk, then using a wooden spoon, then using your hands when the dough gets too thick.
3. Roll out the dough on a floured surface and knead for a few minutes until it's no longer sticky. Add more flour if necessary. Let rise in a warm spot for 90 minutes.
4. Punch down the dough and roll out on a floured surface. Knead for 5 minutes then divide the dough in three. roll each piece into a long tube, about the length of your baking sheet.
5. Braid your dough and place on a parchment lined baking sheet. Let rise for 45 minutes.
6. Heat your oven to 375 F while the dough continues to rise.
7. Brush the bread dough generously with a beat egg and bake for 40 minutes. Place on a cooling rack right when you take it out of the oven and let it cool half an hour before eating.
Note: Add more honey if you want a sweeter bread.
