Drunken Cherry Ice Box Cookies
Yield: About 3 dozen cookies

Ingredients
1 cup butter, softened
1/2 cup brown sugar
1 large egg yolk
1 tsp vanilla
1/2 tsp salt
2 & 1/4 cups flour
3/4 cups brandied cherries, sliced
Directions
1. In a large bowl, cream the butter, sugar, egg yolk, vanilla and salt together until light and fluffy.
2. Gradually add the flour and combine well.
3. Stir in the cherries.
4. Divide the dough in half. Form each half into a log and wrap in parchment paper/plastic wrap. Refrigerate overnight.
5. Preheat oven to 350 F. Cut the cookies into 1/2 to 1/4 inch slices. Place on parchment lined pan and bake for 7-13 minutes until the bottom of the cookie is lightly browned. Flip and bake another 7 minutes. Cool on wire racks.
Note: Keep an eye on your cookies. I wrote 7-13 minutes for the initial baking time because my slices were thicker and they needed the full 13 minutes.
Note: This recipe also works well with dried cherries or dried cranberries.
