Ingredients
8 small/medium red potatoes, washed (not peeled)
1/2 cup (125 g) unsalted butter
1/2 cup (125 ml) hot whole milk
Salt to taste

1. Bring a large pot of water to a boil. Add a little chicken stock for flavour (optional). Add the potatoes to the pot and boil for 25-40 minutes. Put a fork through the largest potato at the end of the boil time. If it passes through easily, your potatoes are done.

2. Turn off the burner, drain the potatoes and carefully wipe the pot. Return the pot to the burner (it'll still be hot) and add the butter.
3. While the butter is melting, very careful peel your potatoes using a knife to scrape the skins off. Wear heat-resistant gloves, the potatoes are still very hot. Place the peeled potatoes into the pot of melting butter.
4. Mash the potatoes until smooth. Add the hot milk and salt to taste. Mash and mix until smooth.
