Crispy Oatmeal Cookies
Crispy Oatmeal Cookies
(Adapted from Taste of Home)
Yield: about 2 dozen cookies

Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 & 1/2 cups quick oats
3/4 cup flour
1/2 tsp baking soda
1/2 tsp salt
1/8 tsp nutmeg
1/8 tsp cinnamon
Directions
1. Preheat oven to 350 F. Line 2 baking sheets with parchment paper.
2. In a large bowl, cream the butter and sugar together until fluffy. Add the egg and vanilla and beat well.
3. In a medium bowl, combine the oats, flour, soda, salt and spices. Add to the batter and mix well to combine.
4. Drop tablespoon sized balls onto the baking sheets. Press down with a flour-dipped fork to flatten. Bake for 10 minutes.
