Chocolate Coffee Cake
(From Williams Sonoma "Muffins")
Ingredients:
For the Streusel:
2/3 cup flour
1/2 cup brown sugar, packed
1/2 tsp cinnamon
6 tbsp unsalted butter, softened
3/4 cups chocolate chips
For the Cake:
2 cups flour
2/3 cup cocoa
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter
1 cup brown sugar
3 eggs
1 1/4 cups sour cream or plain yogurt
1 1/2 tsp vanilla
Directions:
1. Preheat oven to 350 F. Butter and flour a 9 x 13" pan.
2. To make the streusel, whisk together the flour, brown sugar and cinnamon. I melted the butter a little in the microwave then added it to the dry mixture. I used my hands to squish it all up into a little bit of a cookie dough texture then added the chocolate chips. Set aside.
3. In a small bowl, whisk together the flour, cocoa, soda, powder and salt.
4. In a large bowl (I used my hand mixer), cream the butter and sugar together until fluffy. Add the eggs one at a time, beating well. Alternate adding the dry mix, yogurt and vanilla in increments of two or three, beating well after each addition. When everything is incorporated, beat a further minute or two until everything is nice and fluffy.
5. Spread the batter in the pan evenly. Top with the streusel. Bake for 40 minutes or until a toothpick comes out clean.
