Cheese and Onion Bread
(Adapted from Eat This! by Dom Deluise)

Ingredients
2 tbsp butter or olive oil
2 medium onions, chopped
1 egg
1/2 cup sour cream
Pepper to taste
2 cups flour
1 tbsp baking powder
1/4 cup butter, cubed at room temperature
1 cup shredded Cheddar cheese
2/3 cup milk
Fresh minced or dried parsley
Directions
1. Preheat oven to 425 F. Butter or grease a 9x9 inch baking pan (or a pan about the same size).
2. Sauté the onion in butter until soft - about 7-10 minutes. Keep the heat on medium low so you don't burn the onions. Let cool a bit when done.
3. In a small bowl, mix the egg, sour cream and pepper together. Add the onions and set aside.
4. In a large bowl, whisk the flour and baking powder together. Cut in the butter until the dough is crumbly. Stir in half of the cheese and the milk. Use your hands to mix well into a soft dough, making sure to incorporate all of the flour.
5. Press the dough into the bottom of your prepared pan. Spread the onion mixture on top. Sprinkle the remaining cheese and parsley.
6. Bake for 25 minutes. Serve warm.
