Cauliflower Gratin



Cauliflower Gratin
Yield: 4-6 side servings

Ingredients

1 head cauliflower, cut into florets
Salt
4 tbsp unsalted butter (56 g)
3 tbsp all-purpose flour (23 g)
2 cups hot milk (500 ml)
1/4 tsp nutmeg (0.7 g)
3/4 cup grated Gruyere cheese, divided (approx. 100 g)
1/2 cup grated Parmesan cheese (apporx. 50 g)
1/4 cup bread crumbs (27 g)
2 tbsp melted butter (28 g)

Directions

1. Preheat oven to 375 F (190 C, gas mark 5).

2. In a large pot, boil the cauliflower for about 5 minutes, drain.

3. In a saucepan over medium/low heat, melt the butter. Add the flour and stir constantly for 2 minutes. Pour in the hot milk and whisk to a boil. Whisk constantly until the milk mixture thickens, it shouldn't take more than a minute.

4. Take the saucepan off the heat and add the nutmeg and cheeses (Save a little Gruyere for later). Stir well until the cheeses melt.

5. Pour about 1/3 of the cheese sauce into a baking pan (about 7x11 inches, 18x28 cm). Top with cauliflower and the rest of the sauce.

6. Combine the breadcrumbs and melted butter and drizzle on top. Sprinkle with the remaining Gruyere.

7. Bake for 30 minutes.
