Cauliflower Casserole


Cauliflower Casserole
(Adapted from Southern Living)
Serves 4

Ingredients

1 head of cauliflower, chopped
Oil or butter
1 onion, chopped
2 cloves garlic, chopped or minced
1 cup sour cream
150 g goat cheese (or cream cheese) at room temperature
1/2 tsp salt
2 1/2 cups grated Cheddar cheese (reserve about 1/2 cup to top at the end)
Approx 1 cup Town House or Ritz crackers
1 tbsp melted butter

Directions

1. Preheat oven to 425 F.

2. Boil or steam cauliflower until soft, set aside.

3. In oil or butter, fry the onion until soft, about 7-10 minutes. Add garlic for 1 minute then take off heat.

4. In a large bowl, mix the sour cream, goat cheese, salt and Cheddar together. Add the onion mix and stir well. Add the cauliflower and gently fold.

5. In a large ziptop bag, crush up the crackers, but not too much, you want some pieces to bite into! Add the melted butter and mix well.

6. Pour the Cauliflower mix into a 13x9 baking dish. Top with cracker/butter mix and some shredded Cheddar.

7. Bake for 15-20 minutes until the top is a little brown.

Note for me March 27, 2022: Add more Cheddar on top of the crackers!

  1. We really like cauliflower, but unfortunately the cost of fresh has skyrocketed here in recent weeks. We do have a package of frozen cauliflower and wondering if packaged frozen (defrosted of course) could also work for this casserole. Also, I will use cream cheese vs. goat cheese so thanks for the substitute note too.

  2. Dorothy, I made this a second time with frozen cauliflower that we bought packaged from the store. It turned out fine except I noticed there was less cauliflower in the package than a fresh head. I know what you mean about the price of cauliflower...and everything. When I see sales, I buy lots and either can or put them in the freezer! Let me know how it tastes with the cream cheese! ♥

    For autumn, though. I failed to join also cause atm we somehow just enjoy the warm days with a boring salad.
