Caramelized Onion and Garlic Hummus


Garlic and Caramelized Onion Hummus
(Adapted from Food and Wine)

Ingredients:

2 large cloves garlic, peeled
Olive oil
1 small onion, thinly sliced
1 cup chickpeas *
1 tbsp lemon juice
1 tbsp olive oil
1/4 tsp salt


Directions:

1. Preheat oven to 350F. Place the uncut garlic cloves on a small tray, drizzle with a bit of olive oil and bake 10 minutes or until soft.

2. Remove from the oven and let cool.

3. In a small pan, heat 1/2 tbsp olive oil. Add the onion and cook over medium-high heat until the onion is very soft - about 15 minutes. Stir frequently - don't let the onion burn!

4. Add all ingredients (except the water) to a food processor and pulse until everything  is combined. Add a little water at a time to get the consistency you like.

*I soak 1/2 cup of dry chickpeas in water for about 12 hours. I drain and rinse them. Then I simmer them for one hour on the stove in water. I like to shell my chickpeas, so I leave them in the water and when it's cooled a bit, I remove the skins and they're ready to go!
