Settled in the Maritimes of Canada, surrounded by the forest and Acadian Mountain Chain, I live a simple life of gratitude. This blog is a journal of my art, food, furkids, garden, home, my life and my thoughts. Thanks for reading!
Caprese Paninis
Caprese Paninis
(Adapted from Williams Sonoma)
Makes 2 Paninis
Ingredients
4 pieces of bread
Butter and mayo (optional)
Bocconcini or Homemade Quick Mozzarella
Tomato slices
Fresh basil
Directions
1. Butter your bread and spread a wee bit of mayo.
2. Stack the sandwich with Bocconcini slices, tomato slices and fresh basil.
3. In a hot pan, add a bit of butter if you like then place your sandwiches in the pan. Each side took about 4-5 minutes to brown.
We sprinkled ours with a bit of Balsamic vinegar and it was a great combination of flavours!
I don't have a panini maker, so I used the flat top of a large pot and weighed it down with another pot to flatten it a bit.
