Buffalo Cauliflower Fajitas
Buffalo Cauliflower Fajitas

Makes: 3 Fajitas

Ingredients
For the cauliflower:
1/2 head cauliflower cut in bite sized pieces
4 tsp olive oil
1 tsp garlic powder
Frank's Red Hot Sauce to taste
S&P to taste
For the fajitas:
3 flour tortillas
Shredded Cheddar or Monterey Jack cheese
Blue Cheese dressing
Cilantro
Chives, chopped
Directions
1. Preheat oven to 425 F.
2. In a large bowl combine cauliflower, olive oil, garlic powder, Frank's Red Hot and S&P. Stir to combine. Transfer to a large piece of foil and fold up the foil into a pack on baking sheet. Cook for 30 minutes.
3. Remove cauliflower from the oven.
4. To assemble fajitas, fill each tortilla with cheese and cauliflower. Drizzle with Blue Cheese dressing and top with cilantro and chives.
Note: For a non-spicy version, omit the chili powder, Frank's Red Hot Sauce and pepper. Replace these ingredients with a few shakes of cumin. Serve with the original Blue Cheese dressing or replace with salsa and sour cream.
Note: The original recipe said that half a head of cauliflower would make EIGHT fajitas - nope. We barely had enough for three, so maybe use the entire head for 4 servings.
