Breakfast Tacos
Breakfast Tacos
(Adapted from Williams Sonoma "Breakfast Comforts")
Ingredients:
2 large potatoes
Olive oil and unsalted butter
1 onion, chopped
4 eggs
Unsalted butter
Flour tortillas
Homemade Salsa
Shredded cheese (I used a mix of Cheddar and Mozzarella)
Toppings: Sour Cream and Cilantro
Directions:
1. Wash the potatoes. Prick them with a fork and boil for about half an hour. Drain, peel and let cool. Cube when the potatoes have cooled down.
2. In a large pan, heat about a tbsp each of oil and butter. Add the onion and cook for about 10 minutes, or until soft. Add the potato and cook, stirring often, until soft and browned. Season with S&P if you like.
3. Prepare your eggs as you like them.
4. On a plate, place a flour tortilla. Spread the potato mixture, homemade salsa then place your eggs on top. Sprinkle with cheese and cilantro. Serve with sour cream.
