Breakfast Burritos
Makes: 5 Burritos

Ingredients
1 tbsp Olive oil and 1 tbsp butter
3 medium potatoes (washed and diced)
1 onion, chopped
6 eggs
1 tsp cumin
2 tbsp salsa
About 1/2 to 3/4 cups shredded Cheddar cheese
Directions
1. Heat olive oil and butter in a large frying pan over medium heat. Add potatoes and cook for 10 minutes, stirring occasionally.
2. Add onions and cook for 5 minutes.
3. Cover and cook for another 20 minutes, stirring once in a while until the potatoes are fork-tender.
4. Meanwhile, beat the eggs in a medium bowl. Whisk in the cumin and salsa.
5. When the potatoes are done, add the egg mixture and the cheese. Cook, stirring often, until the eggs are set to your liking.
6. Warm your tortillas a little to make them pliable. Fill each tortilla with the egg filling, leaving enough room all around the tortilla so you can wrap it up.
7. Fold over the ends, then roll the tortilla up. Serve immediately or wrap tightly in foil and set aside.
8. When you're ready to eat, preheat your oven to about 400 F. Place the foil-wrapped tortillas on a pan and into the oven for 15 minutes to heat them through.
Top with chives and/or cilantro and serve with salsa and sour cream.
