Blueberry Muffins
(makes 12)

Ingredients
2 cups flour
2/3 cups brown sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, melted and cooled a little
1 cup milk
1 tsp vanilla
2 eggs
1 cup blueberries (I use frozen)
Directions
1. Preheat oven to 400 F and grease or line your muffin pan.
2. In one bowl, whisk all the dry ingredients together.
3. In a larger bowl, whisk all of the wet ingredients and blueberries together.
4. Combine the dry into the wet ingredients.
5. Spoon the batter into 12 muffin tin cups, cook about 25 minutes and let cool on a wire rack.
