Best Crepes
(I've had this printed for years, could be a Julia Child recipe, I have no clue anymore!)
(makes about 5-6 crepes)
Ingredients:
2 eggs
1/2 cup water
1/2 cup milk
2 tbsp melted butter
1 tsp vanilla
1/4 cup brown sugar
1/4 tsp salt
1 cup flour
Directions:
1. Mix wet ingredients. Add sugar and salt and whisk well.
2. Sift flour into wet ingredients - if you don't sift, it'll be lumpy - no good for crepes!
3. Whisk.
4. Over medium heat, add a wee bit of butter to a non-stick 9-inch pan.
5. Pour about 1/2 cup batter into the pan and swirl the pan around so the batter covers the bottom and part of the sides.
6. It takes a minute or so for the bottom to brown slightly, you'll see bubbles on top, then it's time to flip.
It takes some practice to make a good crepe, keep practicing! It's a yummy experience!!
