Baked Enchiladas
Ingredients:
6-8 large tortillas (cut them so they fit a 9 x 13-ish pan)
Salsa
2 cooked chicken breasts, shredded
About 1 cup of black beans, pre-cooked
8 fresh tomatoes cut and drained
Handful of fresh chives
Green or black olives
Cheddar/Monteray Jack/Mozzarella cheese combo, or whatever you like.
Fresh Cilantro
1. Layer everything starting with the tortillas all the way to the cilantro; repeat one more layer.
2. On the top layer, place the rest of the tortillas with cheese and cilantro.
3. Bake at 375 for about 30 minutes, then broil the cheese.
