Asparagus Soup
Asparagus Soup
Serves: 2-3

Ingredients
3 tbsp olive oil
1 pound asparagus, chopped **
2 small potatoes, peeled and chopped
4 green onions, chopped
1 splash white wine
4 cups chicken broth
**Weigh your asparagus after you've trimmed and chopped them. If you have large asparagus, it's nice to peel them just up to the heads - it takes away any bitterness.
Directions
1. In a large pot, heat olive oil. Add all veggies, stir and cook for about 5 minutes.
2. Add a splash of wine to the pot to deglaze, then add the broth.
3. Bring to a boil then to a simmer. Simmer for about 30 minutes partially covered.
4. Use a stick blender to blend well.

This sounds delicious, Rain. I think I would like to try it. Can I ask what may be a silly question? Do you cook the asparagus before chopping and adding to the soup? I've only every boiled/steamed asparagus in a bit of water for a few minutes before serving on a plate with butter and salt on it.
ReplyDeleteYou know what... I see now that you chop it, then saute it before adding it to the soup. And then it cooks further for 30 minutes. I can see now that you must chop it raw. Looking forward to giving this a try.
ReplyDeleteOh yes, I will be making that asparagus soup but will use vegetable broth instead if chicken broth. I don’t think it will make that much difference. Thank you for the recipe.

Sorry Becki, I'm a little behind on comments! Blogger doesn't notify me anymore!! So yeah, you figured it out lol...I don't pre-cook the asparagus. Just remember to peel them if they're thick to take away any bitterness!!
