Asparagus and Goat Cheese Paninis

Ingredients:
Bread
Butter or mayo (optional)
Goat cheese
Blanched asparagus - I blanched my asparagus for 5 minutes because it was quite thick
If you're lucky enough to have a panini press, follow the instructions! But I don't have one so this is what I did:
Directions:
1. Slice your bread and spread some butter and/or mayo on the slices if desired.
2. Brush a scant amount of olive oil in a pan and heat it on medium heat.
3. Spread a good amount of goat cheese onto one side of the bread and layer on your asparagus spears. Put the second piece of bread onto the sandwich and carefully push it together.
4. Place the sandwich in the hot pan and use a plate, another pan or a pot cover to press down the sandwich as it cooks - you want it to weigh down the panini, acting like a press. Check once in a while to see if the bottom has browned. When it has, flip and repeat. Mine took about 4-5 minutes per side.
Note for me: next time try this with zucchini and eggplant!
