Apple Cider Vinegar
(Original Recipe on Wellness Mama)
Step 1: Chop up some apples (including the core and skin) and fill a large jar 3/4 full with them.
Step 2: For each jar, dissolve 1 tbsp sugar (I used brown sugar) into 1 cup filtered water and pour into jar. Top with water to make sure apples are covered.
Step 3: Use a fermentation weight to push apples down under the liquid to avoid mould forming. Cover with cheesecloth or muslin and store in a dark, cool place for 3 weeks.
Step 4: After 3 weeks, strain the apples, pour liquid back into jars, cover and leave another 3-4 weeks to develop tartness (it will smell very sweet at this stage).
Step 5: Stir every 3-4 days and after 3 weeks, check to see if your vinegar is tart enough for you.
Step 6: When you reach your desired level of tartness, transfer the vinegar into a clean jar with a proper lid and enjoy!
I've read this has a shelf life from 2 years to forever...we shall see! :)
